The Valpolicella Ripasso DOC wine is one of the types of wine provided for by the Valpolicella Ripasso DOC denomination, a DOC of the Veneto region. From hilly vineyards located at 200-350 meters above sea level, located between Valgatara and Marano in the Classic area of Valpolicella.
Valpolicella Classico Superiore produced with the traditional "Ripasso" technique. Fermentation and maceration of fresh grapes in October for about 10 days. Racking. The wine remains until January / February in cement or steel tanks. Subsequently it is refermented on the pomace of the freshly drawn off Amarone, to acquire more body and complexity. Maturation in 50hl Slavonian oak barrels for 12 months. Further evolution in the bottle for 4 months.
It presents the Intense ruby red color and has a delicate scent and with a flavor of the jam. Dry, harmonious, soft flavor with a typical bitter aftertaste. Ideal to taste with pasta dishes, cured meats, meats, game and cheeses. Particularly suitable for accompanying autumn risotto and pasta and beans. It is recommended to serve at 17-18°C.
